One of the world's most eco-conscious hotel chains is about to make its Australian debut. Featuring extensive use of reclaimed timber and steel trusses, 1 Hotel Melbourne (render pictured) will open on June 19 on the banks of the Yarra in the revitalised North Wharf precinct. Its soaring asymmetric glass facade reflects the river's ripples, and the interiors feature a sophisticated palette of neutrals, giant-birdnest sculptures and plush fabrics - all natural, of course. Whisky and winter are a match made in heaven in Tasmania, where the Turner Stillhouse, in the Tamar Valley town of Rosevears in the state's north, has two new offerings - the Three Grain Whisky and a Single Malt Whisky - made with 100 per cent Tasmanian ingredients. For a more immersive experience, you can go behind the scenes with a tour of the distillery, followed by a tasting. Silversea is building the world's southernmost hotel, The Cormorant at 55 South, in Puerto Williams, Chile.
