Victorian Premier Jacinta Allan has condemned the alleged violence, calling the attack "absolutely sickening".
Emergency services were called to an intersection in Melbourne's CBD after 7.40am on October 2 following reports that a woman had been attacked.
Members of the public helped the female victim as police arrived on the scene, near the intersection of Little Bourke and Spencer streets.
The 36-year-old Melbourne West woman was taken to the hospital with non-life-threatening injuries, police said.
Her alleged attacker ran towards Spencer Street, still armed with a knife, CCTV footage appears to show.
Suspect arrested
Police launched an extensive search of the area and arrested the suspect.
A knife was also seized, police said.
The 32-year-old suspect from Melbourne was charged with intentionally causing injury, recklessly causing injury and committing an indictable offence while on bail.
She has been remanded and her case remains before Melbourne Magistrates' Court.
Premier condemns attack
Ms Allan thanked the Victoria Police officers who responded to the attack, praising their "swift response".

"No one who commits brazen, violent acts like this should be on the streets. The accused offender is currently on remand awaiting court," she posted on X on October 16.
"I send my support to the victim of this crime and their family."
